Esta receta me dio mi amiga paraguaya, Cinthia. Es muy fácil de hacer. La mandarina se licua con la cáscara, sólo hay que sacar las semillas, y no sale amarga. Muy rica para la merienda.
I got this recipe from my Paraguayan friend, Cinthia. It´s very easy to
make. The tangerine is blended with the peeling on, you only have to take out
the seeds, and it isn´t bitter. It´s very delicious as snack with a cup of tea
or coffee.
2 huevos
2 mandarinas
1 taza de azúcar
2 tazas de harina
leudante o harina común + 2 cucharitas de polvo de hornear – Royal
2 eggs
2 tangerines
1/2 cup oil
1 cup sugar
2 cups self-risen flour
or all-purpose flour + 2 teaspoons baking powder
Licuar los huevos, las mandarinas partidas por la mitad sin
semillas, aceite y azúcar.
In a blender, blend eggs,
tangerines (cut in half without the seeds), oil and sugar.
En una fuente poner la harina y el polvo de hornear si se está
usando. Añadir la mezcla de las mandarinas y mezclar bien.
In a bowl add the flour and baking powder if
using. Pour the tangerine
mixture into the flour and mix well.
En un molde engrasado poner la masa y hornear a 180°C / 350°F
por 30 minutos o hasta que esté dorado.
In a well-greased pan,
pour the batter and bake at 350°F / 180°C for about 30 minutes or until golden.
Dejar enfriar unos 10 a 15 minutos y sacar del molde.
Let it cool down for 10
to 15 minutes before removing from pan.
