Esta clase de galletitas está en la categoría de "drop cookies", es una masa que se deja caer en la bandeja para hornear con la ayuda de una cuchara, y hace que el proceso de hacer galletitas sea más corto y fácil. La textura es más como una torta, es esponjosa en el medio y con las orillas un poco crujientes.
Estas galletitas están llenas de sabor, es como comer una mandarina! la masa lleva tanto la cáscara como el jugo de la mandarina, haciendo una explosión de sabor en la boca. Perfecto con una taza de café :) .

These kind of cookies are called "drop cookies" because they are made by dropping a spoonful of batter onto a baking sheet, which makes the process of making them a little bit easier and faster. They´re more like little cakes, spongy in the middle and with crunchy edges. 
These cookies are so full flavored its as if you´re eating an actual tangerine. The cookie dough, incorporating both the zest and tangerine juice, is like a taste explosion in your mouth.

Empezamos batiendo la mantequilla con las dos clases de azúcar, y luego añadimos el huevo.

Let´s start creaming the butter and the sugars, then add the egg.

Añadimos el resto de los ingredientes y mezclamos bien. Ponemos la masa en la heladera por media hora.

Add the rest of the ingredients and mix well. Chill the dough for half an hour.

Ponemos de a cucharada de masa en las bandejas y horneamos.

Drop dough by tablespoonfuls and bake.

Dejamos enfriar unos 10 minutos y luego las sumergemos en el decorado. A disfrutar con una taza de café!  (creo que el café negro ayuda a resaltar el sabor de la mandarina en ésta galletita).

Let them cool for about 10 minutes and then dip them in the icing. Enjoy with a cup of coffee!(I think black coffee enhances the tangerine flavors).



Receta:

1/2 taza de mantequilla a temperatura ambiente (57gr./2oz.)
1/3 taza de azúcar blanca (66gr./2.3oz.)
1/3 taza de azúcar negro (66gr./2.3oz.)
1 huevo
2-1/3 taza de harina (292gr./10oz.)
1/2 cucharita de polvo de hornear
1/2 cucharita de bicarbonato de sodio
1/2 cucharita de sal
2 cucharas de cáscara de mandarina
1/2 taza de jugo de mandarina (150ml./4oz.fl.)

Decorado:

1-1/2 taza de azúcar impalpable (187gr./6.6oz.)
3 cucharas de jugo de mandarina

1. Con una batidora eléctrica, batir la mantequilla y las dos clases de azúcar hasta que esté cremoso, unos 3 minutos. Añadir el huevo y batir un minuto más.

2. Añadir la harina, polvo de hornear, bicarbonato, sal, cáscara y jugo de mandarina y batir hasta que esté todo incorporado. Guardar en la heladera por unos 30 minutos (ésto ayuda a que no se esparzan tanto una vez en el horno).

3. Calentar el horno a 190°C / 375°F. Poner más o menos de a una cuchara de masa en una fuente engrasada con unos 5cm. de espacio entre ellas. Hornear por 8 a 10 minutos.

4. Sacar del horno y dejar enfriar en rejillas. Mezclar el azúcar impalpable y el jugo de mandarina. Sumergir cada galletita en el decorado y dejar escurrir en una rejilla. Sirve 32 galletitas.

Cómo guardar: Se puede guardar en una fuente o bolsa hermética en por unos 5 días en lugar fresco. Se puede congelar hasta por 3 meses.

Recipe:

1/2 cup butter, room temperature (2oz./57gr.)
1/3 cup sugar (2.3oz./66gr.)
1/3 cup brown sugar (2.3oz./66gr.)
1 egg
2-1/3 cup flour (10oz./292gr.)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons tangerine zest
1/2 cup tangerine juice (4oz.fl./150ml.)

Icing:

1-1/2 cup icing sugar (6.6oz./187gr.)
3 tablespoons tangerine juice

1. In a mixing bowl, cream the butter and the sugars, about 3 min. Add the egg and beat for another minute.

2. To the cream mixture add the flour, baking powder, baking soda, salt, tangerine zest and juice and mix well. Chill for 30 minutes (this helps the the cookie to keep its shape while in the oven).

3. Drop dough by tablespoonfuls 2in./5cm. apart onto greased baking sheets. Bake at 375°F./190°C. for 8-10 minutes. 

4. Remove cookies to wire racks to cool. Mix icing sugar with tangerine juice. Dip each cookie in icing. Yield: about 32 cookies.

How to store: Store in a airtight container or ziploc bag in a cool place for about 5 days; or freeze them for up to 3 months.
